We top the dish with plenty of freshly shaved dried bonito flakes just before serving. The delicious flavor of the fresh tongue, the fragrant aroma of dried bonito flakes, and the umami of the seafood all match perfectly in this exquisite dish that can only be enjoyed here. We use Koshihikari rice from the Hokuriku region, and top it off with an egg and our homemade sauce.

Our chefs carefully hand-cut raw tongues, which we source from our farm. Compared to thawed, raw tongues retain more of their natural flavor, allowing you to enjoy the full taste of the meat. Furthermore, they have less of an odor and a smooth texture, making them different from tongues found in other restaurants! Please give them a try when you visit.

Special homemade sauce

All of our dipping sauces are homemade. We use a unique blend of several types of soy sauce, three types of sugar, seasonings, and ginger and garlic extracted in a pressure cooker to create a special homemade sauce that brings out the full flavor of the meat.

Craftsmen cut and prepare them by hand.
